Lemony kale and lentil soup

What a treat to come home to a hearty piping hot bowl of lentil soup after a long day in the fall cold ! We have lentils, kale and a few good spices going on here, it makes for a delicious slightly lemony soup.

One of the most viewed recipe here on the blog is a coconut milk spinach and lentil soup so I thought a different version of a lentil soup would do good too. Please tell me what you think.

Lemony kale and lentil soup (serves 4) :

  • 200g uncooked lentils
  • 150g kale
  • 1 onion
  • 1 carrot
  • 2 celery stalks
  • 4 garlic cloves
  • 1 lemon
  • 1,25 liter vegetable stock
  • 2 tsp ground cumin
  • 1/4 tsp cinnamon
  • 1/2 tsp ground ginger
  • Salt and pepper
  • Olive oil

Mince onion and garlic.

Peel and cube the carrot. Do the same witht the celery.  

Take the stalks out of the kale and chop it very finely. Chop the leave in bite size pieces.

Heat the olive oil in a pot.

Add the onion, carrot, celery and kale stalks. Stir fry it for 5-7 minutes.

Aadd the garlic, spices and lentils. Fry for a few minutes.

Pour the vegetable stock, cover and let it cook for 20-25 minutes. Lentils must be tender.

Add the kale and lemon juice. Let it cook 2 more minutes.

Serve warm !
