Crab fried rice
Rice is life. We eat a lot of it so it's great to have a couple new recipes every now and then to switch things up. So here's a fried rice with crab meat recipe. I added a couple eggs, some chives and spring onion and that's pretty much it !
If you have leftover rice from the day before it's even better because the rice will have dried up a bit and it will be easier to stir fry. You could also add some veggies you have on hands : carrots, celery, brocoli...etc. Bon appétit !
Crab fried rice (serves 2) :
- 300g cooked rice
- 200g crab meat
- 2 eggs
- 1 spring onion
- 1 garlic clove
- 1 tbsp minced ginger
- 1 tbsp soy sauce
- 2 tbsp toasted sesame oil
- Chives
- Salt and pepper
Beat the eegg in a bowl with a pinch of salt. Cook the scrambled eggs in a pan, turn the heat off before they're completely cooked.
Mince the spring onion. Grate the garlic clove.
Heat 2 tbsp oil in a wok (or deep frying pan) and add the garlic, ginger and spring onion. Fry for 2 to 3 minutes.
Add the rice and stir fry for 2 to 3 minutes.
Add the crab meat, scrambled eggs and soy sauce. Mix delicately so you don't mash the rice.
Season with pepper and salt if needed.
Sprinkle with chives and serve !
