Scrambled silken tofu (vegan)

I know a lot of people are doing Veganuary in January, so it was a good time for me to share this delicious scrambled silken tofu recipe with you, it mimics the texture of scrambled eggs so well but it is vegan ! And... It's almost February. Haven't had time to share it sooner. Weeks go by so fast...!

Served with crispy potatoes and some arugula makes it even better in my humble opinion. It's a nice vegan brunch alternative or breakfeast idea if you have more time in the morning to cook. If you're looking for another recipe with silken tofu, I have one right here.

Scrambled silken tofu (serves 1) :

  • 125g silken tofu
  • 1/2 onion
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 pinch ground turmeric
  • 1 tbsp olive oil
  • Parsley
  • Salt and pepper

Mince the onion, put them in the pan with the olive oil and fry them for 5 to 8 minutes.

Once the onions are done, put them in a bowl and set aside. Add the tofu to the pan and break it in pieces with a wooden spoon or spatula. Cook until the water has evaporated and the texture ressembles scrambled eggs.

Add all the spices, season with salt and pepper, stir fry everything a few minutes.

Put the onions back into the pan and sprinkle with chopped fresh parsley.

Serve with crispy potatoes.
