Tacos de lengua, beef tongue tacos

I love Mexican cuisine and I love trying uncoventional (for us) traditional recipes. I made tacos de lengua, beef tongue tacos. It was incredibly tender and so good !

I had seen them in a Netflix show about tacos. I wanted to try them so bad but all the Mexican restaurants I checked here in Lyon didn't make them. So I had to try making them at home with a traditional recipe.

In the recipe, I do not blanch the beef tongue before cooking because I am not reusing the cooking liquid. The impurities that are in there will be thrown away anyway so it saves us a little bit of time.

My favorite salsa for these tacos is the salsa verde. You can obviously make your own but I love the Clemente Jacques one. Slightly spicy, fresh and very flavorful.

What size of tortillas for these tacos ? 12 to 15 cm tortillas are perfect. Big enough to fit meat and all your toppings of choice inside but not too big either. I buy them in bulk at Casamex, great products and quick shipping.

Serve with salsa verde (or the salsa of your choice), diced onions and a lot of cilantro !

Tacos de lengua, beef tongue tacos (serves 6) :

  • 1 beef tongue
  • 1 onion
  • 5 garlic cloves
  • 3 bay leaves
  • 10 peppercorns
  • 10 cilantro stalks
  • 2 tsp salt
  • 1,5 liter water
  • Vegetable oil

To serve the tacos :

  • Tortillas
  • Cilantro
  • Onion
  • Salsa
  • Lime

Quarter the onion, peel the garlic cloves and chop them in half.

In a pressure cooker, add the beef tongue, onion, garlic, peppercorns, bay leaves, cilantro and salt.

Add the water and close the pressure cooker.

Let it cook for an hour, then check if the tongue is tender. You should be able to put a knife through it with no efforts. If not, cook a little longer.

Put the beef tongue on a chopping board. Let it cool until you can handle it without burning your hands. Take the thick skin off and discard it.

Chop it into small cubes.

Heat a little bit of vegetable oil in a pan and fry the beef tongue cubes a few minutes until golden and crispy.

Serve with tortillas, raw onions, cilantro and salsa of your choice.
