Fudgy peanut and Guinness brownies
Fudgy brownies with peanuts and... Guinness beer ! Why ? You may ask. Because it adds so much moisture and fluffiness to the batter and makes it extra fudgy. It doesn't taste bitter at all. It's so good and satisfying with the peanuts.
For the baking dish, I'd recommend not using a rectangular baking pan, your brownies will be too thin and not get that extra fudginess. I use a 23x23cm square pan for these and they come out perfect. I get 9 squares out of this pan.
You could replace the peanuts by walnuts, pecan nuts or hazelnuts. You could even put a mix of all of these if you'd like. The point is to get a crunchy element. Roasting the nuts will bring a ton of flavors so don't skip that step ! V
Fudgy peanut and Guinness brownies (one 23x23cm pan) :
- 180 ml (3/4 cup) Guinness beer
- 90 g butter
- 110 g dark chocolate
- 100 g sugar
- 2 eggs
- 1/2 tsp vanilla extract
- 70 g flour
- 1 pinch of salt
- 100 g unsalted peanuts
Preheat the oven at 180°C/350°F.
On a sheet pan, lay the peanuts in a single layer and roast them for 15 to 20 minutes in the oven.
Pour the Guinness into a small sauce pan et reduce on medium heat for 20 minutes, liquid must be reduced by half.
Melt the chocolate and butter au bain marie or in the microwave.
Pour the chocolate and butter into a bowl, add the sugar and whisk.
Add a pinch of salt, vanilla extrat, 2 eggs and 1/4 cup of the reduced Guinness. Whisk.
Chop the peanuts roughly and add them to the batter. Add the flour and fold it in with a spatula until just incorporated, don't overmix.
Bake for 20 to 25 minutes, depending on your oven. When you stick a toothpick in, you must see some moist brownie crumb on it. Then it's done !
Leave it to cool on a rack.
Cut your brownie in 9 squares and serve !
