Tiramisu with speculoos

What is better than a simple, no bake recipe ? You tell me.

I looove tiramisu. Like crazy. But I don’t really make it often just because I don’t really think about it. This time I did and I am happy. My version was a little bit too sweet so I corrected the recipe down below. I know you can find unsweeted whipped cream out there but here, it is not even existing. So my cream was rich and sweet but it was such a delight.

We made them the night before and ate some for breakfast (what?), that is a good start to your day, trust me.

Tiramisu with speculoos (4 big glasses) :

  • 3 egg yolks
  • 100g sugar
  • 2 cup whipped cream
  • 1 cup mascarpone
  • Speculoos
  • 1 tsp vanilla extract
  • 1 expresso shot

Beat the egg yolks with the sugar. When the sugar has dissolved, add the mascarpone and vanilla extract. Mix until you have a smooth cream. Add your whipped cream and gently mix with a spatula.

Dip your speculoos in coffee and crumble it in the glass, top with a layer of cream. Repeat until you’re done. Put in the fridge for a minimum of 4 hours before eating it.
