I’ve running on little to no sleep these days because of a teething baby. So this is not really a recipe but more of an easy lunch idea for you, quick to put together, pretty and delicious (mamas out there, you feel me I’m sure).
I used rye bread but use what you want, every bread will do! This is gonna be my go-to lunch now I guess. I love the combination of flavor there, sweet, savory, tangy. LOVE IT.
Lunch toasts 2 ways :
- 2 rye bread toasts
- 3 slices of mozzarella cheese
- A handful of cherry tomatoes
- 1 tsp balsamic vinegar
- Some blue cheese
- 1/2 pear
- 1 tsp honey
Preheat your oven at 180°C (356°F).
On a piece of toast, put mozzarella and tomatoes on top.
On the other toast, spread the blue cheese and sliced pears.
Bake for 10 minutes, keep an eye on it.
Add honey on the pears and balsamic on the tomatoes.
Done! Eat warm.
