Big chocolate chunks banana bread (dairy free)
I rarely do dairy free baking just because we don’t mind dairies. But I have a friend who just had a baby and I wanted to drop a little snack for the mama who can’t eat lactose. So here I got… A delicious dairy free banana bread with big chunks of chocolate.
Just a little tip for the bananas : let them ripen as much as you can. I literally let mine ROT on the counter until they’re black and I freeze them to use for baking. The flavor is much more complex and deep this way, try it!
Big chocolate chunks banana bread :
- 240g (1 + 3/4 cup) flour
- 2 eggs
- 60ml (1/4 cup) dairy free milk (here almond)
- 2 big or 3 medium overripe bananas
- 55g (1/3 cup) brown sugar
- 75g (1/3 cup) honey
- 60g (1/2 cup) melted coconut oil
- 50g chocolate chunks
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 tsp vanilla extract
Preheat the oven at 180°C/350°F.
Mix together the dried ingredients : flour, baking powder, salt, cinnamon and brown sugar.
Mash the banana with a fork until pureed.
In a big bowl, whisk the eggs, honey, melted coconut oil, vanilla extract and almond milk. Add the banana puree and mix well.
Add your dry ingredients in the big bowl and the chocolate chunks. Mix until you no longer see flour.
Grease a cake pan and pour the batter it.
Bake at 180°C/350°F for 20 minutes then cover with foil and bake for 30 more minutes.
Let it cool for a few minutes before getting it out of the pan and enjoy!
