Herby oven confit tomatoes
I love love love tomatoes and I have plenty recipes using this ingredient here on the blog, for example my tomatoes à la provençale! But one thing I really dream of during long Winter is this : oven confit tomatoes. Served over rice with roasted chicken… So simple yet really summery and absolutely divine.
Herby oven confit tomatoes:
- 400g cherry tomatoes
- 60ml olive oil
- 2 garlic cloves
- 1 tbsp chopped mint
- 1 tbsp chopped parsley
- 1 tbsp fresh thyme leaves
- Salt and pepper
Preheat the oven at 200°C/400°F.
In an oven safe dish, add tomatoes, oil and fresh herbs. Mix well.
Add the garlic cloves finely chopped. Season with salt and pepper and mix.
Bake for 15 minutes, tomatoes must be blistered.
Eat as a side!
