Cumin seeds beets salad

Who likes beetroots around here? I know some of you do, I did a little poll on Instagram the other day and the results were pretty 50/50. Well, if you like it, I got something for you today. A delicious salad, full of colorful herbs and freshly ground cumin seeds, a delight.

You can serve it as a starter or a side with some white meat. I really like the roundness of flavor the cumin brings here, with the slightly sweet beetroots it is really good. You'll ask for more!
Cumin seeds beets salad (serves 4) :
- 500g cooked beetroots
- 1 tbsp cumin seeds
- 1/2 red onion
- 1 handful parsley
- 1 handful cilantro
- 60ml olive oil
- 2 tbsp lemon juice
- Salt and pepper
In a pan, toast the cumin seeds a few minutes stirring constantly.
Grind it in a spice grinder or with a mortar and pestle.
Cut the beetroots in cubes.
Mince the onion finely.
Chop parsley and cilantro finely.
Add cumin, onion, parsley, cilantro, oil and lemon juice to a bowl. Mix well.
Season with salt and pepper.
Add beetroots and mix carefully.
Serve or refrigerate until ready to serve!
