Figs and goat cheese salad

A salad full of Fall vibes because we have to wrap our head around the fact that Summer is over and we have to enjoy Fall produces because I love them so so much. Fall might be my favorite season, crisp air but the days aren’t too short yet, rain, mushrooms. Pretty for the eyes, deliciously tasty.

Here is a salad that is absolutely PERFECT for a quick lunch because there is no cooking involved, you just have to whip the sauce together and assemble everything. Winning combo : figs and goat cheese. You can’t be disappointed really, I added a little bit of texture with pumpkin seeds and acidity with pomegranate.

Figs and goat cheese salad (serves 2) :

  • 4 handfuls arugula
  • 6 figs
  • 100g goat cheese
  • 2 tbsp pumpkin seeds
  • 1/2 pomegranate
  • 6 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 10 parsley leaves
  • 1/2 garlic clove
  • Salt and pepper

Take the jewels out of the pomegranate.

Wash arugula and figs.

Put two handfuls of arugula in each bowl, add 50g of goat cheese per bowl.

Cut the figs in 2 or quarter, add to the bowls.

Sprinkle with pumpkin seeds and pomegranate jewels.

Prep the sauce : in a food processor, add oil, vinegar, garlic, parsley. Season with salt and pepper. Mix until smooth.

Serve the salad drizzled with sauce.
