Garlic butter salmon

Have I already told you how much I love salmon? That’s my favorite fish ever. I love it raw in sushis or poke, but also cook in every shapes and forms! So here it is with a little coriander and garlic butter which is absolutely fantastic. So simple, very cool for back to school because it is always a marathon until everyone finds its rhythm and routine.

Because I don’t like scraping my head when I’m already so busy, I just served it with baked potatoes and a cucumber yogurt salad. Simplicity saves lives people, it really does!

Garlic butter salmon (serves 2) :

  • 2 salmon fillets
  • 40g softened butter
  • 1 garlic clove
  • 5-6 coriander/cilantro leaves
  • 1 tsp lemon juice
  • Salt and pepper

Press the garlic in a garlic press or grate it finely.

Chop the cilantro leaves very thin.

Add coriander and garlic to the butter, season with salt and pepper. Mix with a fork until well combined. Refrigerate until you use it.

Preheat the oven at 180°C/300°F.

On a parchment paper covered sheet, place your fillets.

Spread a generous layer of butter onto each fillet.

Add half a teaspoon of lemon juice on each fillet and put it in the oven.

Let it bake for 8 to 12 minutes depending how thick your fillets are.

Serve warm!
