Cozy veggies and lentils soup

Here is a recipe that fits our gloomy and rainy weather perfectly. A delicious lentils soup with veggies and lots of spices to warm up and have fun too.

You can add a lot of other veggies that you have laying around if you want to. It is the kind of recipe that is sort of a base that you can twist to your own taste and needs! Because tomatoes aren’t in season anymore, I used canned tomatoes!

Cozy veggies and lentils soup (serves 4 to 6) :

  • 300g uncooked lentils
  • 100g snow peas
  • 400g tomatoes
  • 1 carrot
  • 1 onion
  • 3 garlic cloves
  • 1 liter of broth
  • 1 bay leaf
  • 1 tsp ground cumin
  • 2 branches of thyme
  • Juice of half lemon
  • 1 tbsp olive oil
  • Salt and pepper

Peel and mince onion.

Peel and chop carrot in small pieces.

Peel garlic cloves and mince it thinly.

In a big pot, add olive oil and fry the onion for 2 to 3 minutes.

Then add garlic, carrot, bay leaf, thyme and a generous pinch of salt and pepper. Fry for a good minute.

Add the broth, tomatoes, lentils and cumin.

Check the seasoning and adjust if needed.

Let it cook for 25 minutes with a lid on and add snow peas.

Let it cook 10 more minutes.

Before serving, add lemon juice to the soup and mix well.

Serve warm with lots of parsley!
