Smoked sausage and white beans soup

Once again a soup recipe but I love it so much, it's painful! So here is a smoked sauge and white beans soup : so good and like a hug in a bowl after a cold cold day.

It's a very generous soup, full of good stuff. Veggies loaded so that you can use all the leftovers veggies of the week, it is ideal and no-waste friendly.

Smoked sausage and white beans soup (serves 4) :

  • 4 smoked sausages
  • 3 carrots
  • 1 big onion
  • 400g cooked white beans
  • 100-150g green cabbage
  • 1 sprig of thyme
  • 1,5 liter vegetable stock
  • 4 garlic cloves
  • Salt and pepper

If you use very fatty sausages, put it in a pot with cold water and bring to a boil. Simmer for 15 minutes and discard cooking water. If not, skip that step.

Meanwhile, peel carrots, onion and garlic cloves.

Slice the carrots, mince the onion and grate the garlic.

Slice green cabbage finely.

In a soup pot, with no added fat, fry the sliced sausages with garlic and onion until golden brown.

Add the stock, carrots, cabbage and thyme.

Season with salt and pepper.

Cover the pot with a lid and let it cook for 20 minutes.

Add the whites beans and cook uncovered for 10 minutes.

Adjust seasoning if necessary and serve!
