Cilantro and lime baked chicken thighs

One of the many upsides of the chicken is that there are so many ways to enjoy it! Here I baked it with lots of lime zest and juice, lots of cilantro and it was a big winner. While it bakes, you even have time to do something else!

I insist on the fact that, if you plan on doing this recipe and have time, you must let it marinate as long as possible for the flavors to really infuse the flesh of the chicken. You can serve it over rices with veggies, it's perfect!

Cilantro and lime baked chicken thighs (6 personnes) :

  • 6 chicken thighs
  • 2 tbsp lime juice
  • 1 tbsp lime zest
  • 15g fresh cilantro
  • 2 garlic cloves
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp pepper

In a big bowl or shallow dish, add lime juice, lime zest, chili powder, cumin, salt and pepper.

Grate the garlic cloves and add it to the bowl. Mix well.

Put the chicken into the marinade and mix well until chicken is well coated.

Let it rest in the fridge for at least 30 minutes and up to 24 hours.

Preheat the oven at 180°C/350°F.

Bake the chicken in a oven safe dish for 25 minutes. Then turn on the grill of the oven and grill for 5 minutes to crisp up the skin.

Serve with chopped fresh cilantro on top!
