Pulled beef and cheddar quesadillas

What's a quesadila ? It's a mexican dish, a tortilla filled with cheese and meet. Here I made pulled beef with a lot of spices and added some delicious melty cheddar. It's great and easy to make, perfect for lunch if you've made the meat ahead.

I cook the beef and spices in a pressure cooker so it's faster. You can do this step ahead, the day before for example. Then you put the tortilla in a pan, add cheese, meat and fold. When it gets cripsy, it melts the cheese and crisp up the tortilla it's great.

The important thing is not to put too much juice in the tortilla when you put the meat, it would wet the tortilla and the tortilla might tear when you flip it. Keep the cooking liquid for something else ! Season a bowl of rice with it, it's good.

You'll probably end up with more meat than necessary, it's also yummy on rice with some avocado and cilantro.

Pulled beef and cheddar quesadillas (serves 2) :

  • 4 tortillas (wheat)
  • 150g cheddar

For the pulled beef :

  • 300g stew beef
  • 1 tbsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp ground ginger
  • 1 onion
  • 1 tbsp tomato paste
  • 1/2 lime
  • 3 garlic cloves
  • 2 cloves
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional)
  • 3/4 liter water
  • Salt and pepper

In a pressure cooker, add all the pulled beef ingredients. Close the lid of the pressure cooker and cook for 1hr30 to 2hrs, the meat must be tender.

Pull the meat with two forks or by using the paddle attachment of your stand mixer.

Take a tortilla, layer a generous amount of cheese on half of it.

Add some pulled beef, don't put too much juice. Add a little bit of cheddar on top.

Fold the tortilla in two.

Grill it in a hot pan on medium heat with a lid on for 2 to 3 minutes. Flip it and cook for 2 more minutes.

Serve warm !
