Goat cheese, preserved lemon & mint dip

I love dips of all sorts! And because I still had some preserved lemons in my fridge, I thought it might taste good with goat cheese and mint in a dip. It was BRILLIANT. Thick but not too much, all the flavors popping in your mouth.
Please use good quality olive oil because you can really taste it in there! Dip some bread, crackers or veggies... I ate the whole bowl with toasted ciabatta bread and it was heavenly.
Goat cheese, preserved lemon & mint dip :
- 200g (7 ounces) fresh goat cheese
- juice of a lime
- 45g (1/4 cup) chopped preserved lemons
- 60ml (1/4 cup) d'huile d'olive
- 1 garlic clove
- 15 mint leaves
- 1/4 tsp ground pepper
Put all the ingredients in a food processor or blender.
Blend until smooth.
Pour the dip and add a little bit of olive oil to make it shiny and pretty.
Dip away!
