Breaded salmon with avocado spread and lemon jelly

I recently took a cooking course at the Paul Bocuse institut that was based on... drum rolls... salmon. We realised this recipe in glasses but I thought it wasn't really easy to eat so I made it a lunch with a few twists and turns.

The most important think is to make the jelly the day before so that it has time to set. And cook the salmon PINK so it doesn't taste dry and is absolutely delicious. The avocado spread is very simple to make. Breading is what takes the most time!

Breaded salmon with avocado spread and lemon jelly (serves 2-3) :

For the breaded salmon :

  • 300g salmon (fillets)
  • 100g breadcrumbs
  • 50g flour
  • 2 eggs
  • Oil for frying

For the lemon jelly :

  • 100g lemon juice (about 3 big)
  • Zeste of a lemon
  • 40g sugar
  • 3 gelatin sheets
  • 15cl water

For the avocado spread :

  • 1 avocado
  • 2 tbsp greek yogurt
  • 1/4 cilantro bunch
  • 3cl olive oil
  • 1/2 lime

The day before, prep the lemon jelly.

Put the gelatin sheets in a bowl of cold water. Put 15cl of water in a sauce pan with sugar. Mix until the sugar is dissolved.

Zest half of a lemon and squeeze the juice out of all the lemons. Add the zests and lemon juice to the sugary water and let it boil for a few minutes. Turn the heat off.

Add the drained gelatin to the sauce pan and whisk until dissolved. Pour the jelly into a baking dish covered with plastic wrap. Put it all in the fridge until the next day!

For the avocado spread : add the avocado, cilantro, lime juice and olive oil in a food processor. Blend until smooth.

Pour it into a bowl, add greek yogurt and fold it in. Keep the spread into the fridge until ready to use.

For the breaded salmon : take the skin of the salmon off. Cut it into cubes of similar size.

Prep 3 bowls, one with beaten eggs, one with flour and one with breadcrumbs.

Bread into that specific order : flour, eggs, breadcrumbs. Repeat the process TWICE for each salmon cubes.  

Fry the salmon cubes in oil for 3 minutes maximum. It must be pink inside.

To serve, spread a big spoon of avocado spread on a plate, add a few cubes of salmon and add a few cubes of jelly.
