Whipped feta and tomatoes tart

Let me introduce you to your next favorite summer colorful tart. Instead of just spreading wholegrain mustard, as it's usually done, I whipped fetta and added a few other ingredients to make a fluffy spread. It really adds texture and richness to this light dinner.

Serve with greens dressed in a light vinaigrette and you're set for a successful and delicious dinner that will help you make the most out of our summer produces! You can really add any herbs or spices to the whipped feta to make it even fancier.

Whipped feta and tomatoes tart :

  • 1 short pastry
  • 3 big tomatoes
  • 200g feta cheese
  • 2 tbsp lemon juice
  • 1 tbsp wholegrain mustard
  • 1 tbsp honey
  • 4 tbsp olive oil
  • 10 basil leaves
  • Salt and pepper

In a food processor or with an electric mixer, whip the feta, honey, lemon, mustard and olive oil together until creamy. Season to taste.

Preheat the oven at 180°C/350°F.

Make a crust with the short pastry by folding the edges over.

Poke holes in the pastry using a fork.

Spread the whipped feta with a spatula onto the pastry.

Slice the tomatoes and add it on top.

Bake for 20 minutes.

Sprinkle with chopped basil.

Serve warm or at room temperature.
