Spiced ground beef
For this recipe, I got inspired by a recipe I found in this cookbook about asian cuisine. It's a gem, I really recommend it. I put the meat into homemade steamed buns, you can find the recipe for them here. It was delicious!
The beef gets infused with all the herbs and spices, it really gives it a delicious flavor. I added fresh carrots, cilantro and sriracha to my buns and it was PERFECT.
Spiced ground beef (serves 4)
- 500g (1lb) ground beef
- 4 shallots
- 4 garlic cloves
- 1 leek
- 3cm ginger
- 5 crushed coriander seeds
- 1 lemon (juice)
- 6 tbsp nuoc-mâm
- 6 tbsp soy sauce
- 1 tbsp sugar
- 30cl beef stock
- Chives and cilantro
- 2 tbsp oil
- Pepper
Chop shallots, garlic, ginger and leek finely.
In a deep pan or wok, heat the oil. Add ground beef, pepper, coriander seeds. Stir constantly for a few minutes.
Add minced shallots, ginger, garlic, leek, lemon juice, nuoc mam and soy sauce, sugar and beef stock.
Cover with a lid and let it cook for 20 minutes.
Garnish with cilantro and chives before serving over rice or in buns.
