Mojo salmon bowl

A pretty bowl like I like them! With mojo marinated salmon, mojo is a cuban spicy sauce, with lots of citrus and spices. Then you pretty much add whatever you like to your bowl, I put rice, peas, avocado, carrots and cilantro, of course.

Fairly quick to make if you think ahead to let it marinate. Perfect for a lunch at home or light dinner. I also like adding broccoli or sprouted lentils to this! But seriously, this salmon and this sauce... Mindblowingly spicy and delicious. Tone the chilies down if you don't like it too spicy.

Mojo salmon bowl (serves 2) :

  • 2 salmon fillets
  • 1/2 orange
  • 1/2 lime
  • 1 tbsp oregano
  • 1 tbsp ground cumin
  • 2 dried chilies
  • 1 garlic cloves
  • 1 handful fresh cilantro
  • Drizzle of olive oil
  • Salt and pepper

Toppings ideas :

  • Basmati rice
  • Peas
  • Carrots
  • Avocado
  • Lime

Prep the marinade by mixing together orange juice, lime juice, oregano, cumin, chopped chilies, minced garlic, chopped cilantro, salt and pepper. Mix well.

Add the salmon to the marinade and let it sit in there for one to four hours. Not more than that because it is a very citrusy marinade.

Preheat the oven at 180°C/350°F.

Drain the salmon from the marinade and put it on a baking sheet. Drizzle with olive oil.  

Bake for 12-15 minutes depending on the thickness of the fish.

Serve over rice with your favorite toppings!
