Chewy oat and pecan squares

I've been a little MIA lately, lots of exciting projects with clients, that kept me quite busy! But I am back with a sweet recipe, I am sure you'll forgive me. Chewy oat and pecan squares with chocolate and a good amount of peanut butter.
Chewy oat and pecan squares (12 squares) :
- 90g rolled oats
- 30g oat flour
- 80g peanut butter
- 50g melted coconut oil
- 1 large egg
- 85g chocolate (chunks)
- 70g honey
- 40g chopped pecan nuts
- 60g brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 tsp vanilla extract
Preheat the oven at 160°C/325°F.
Put parchment paper to a square baking pan.
In a bowl, add coconut oil, honey, peanut butter, vanilla, egg, salt and cinnamon. Whisk until well combined.
In a big bowl, add oats, oat flour, pecan nuts and brown sugar.
Add the coconut oil mix to the big bowl and mix with a spatula until everything is well coated.
Add chocolate and mix a bit more.
Add the batter to the pan and push it down with the spatula.
Bake for 20-25 minutes.
Let it cool for a few minutes before cutting it into squares.
Cool completely before digging in.
