Herby and garlicky prime rib

I know cooking large pieces of meat at home can be intimidating, you don't want to mess it up. Ribs are very forgiving, it's so tender, even if it's slighlty overcooked it still tastes delicious. Can we also talk about this marinade? So good. Thyme, parsley and garlic : can't go wrong with these!

I bought a meat thermometer a couple years ago and I never looked back! It's just so handy and prevent all kind of guessing. Also, don't skip the resting step, it's really important, it will be even better.

Herby and garlicky prime rib (4 personnes) :

  • 1,5kg prime rib
  • 3 garlic cloves
  • 6 thyme sprigs
  • 1/2 bunch of parsley
  • Olive oil
  • Salt and pepper

The day before, chop parsley and garlic finely.

Add garlic, parsley and thyme in a shallow dish with the meat and a generous glug of olive oil.

Rub the garlic and herbs with the meat.

Let it marinate overnight.

Two hours before cooking, take the meat out of the fridge to let it come to room temperature.

Season the meat with salt and pepper.  

Heat a pan on medium heat with a bit of oil.

Grill the meat 6 minutes on each sides, mine was really thick so I pushed it ot 8 minutes on each sides.

Let the meat rest for 5 minutes before slicing thinly and serving!
