Spiced lentil soup
A comforting dish, slowly cooked, full of spices and warmth. I love lentils, I love stews/soups. So we can't go wrong here...! Here is my version of the spiced lentil soup with tomatoes, carrots and a lot of spices. I really outdid myself with the toppings here : coconut yogurt, jalapeño and a lot (way more than pictured) of cilantro.
This is comfort food to me. Let it reduce a bit more and eat it with rice, it's as good and as satisfying. I'm sure you'll love it!
Spiced lentil soup (serves 5-6) :
- 1 onion
- 3 garlic cloves
- 2 carrots
- 2 potatoes
- 400g uncooked lentils
- 500ml vegetable stock
- 250ml water
- 70g tomato paste
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp ground cinnamon
- 2 tsp ground cumin
- 2 tsp ground ginger
- 2 tsp ground paprika
- 1 tbsp lemon juice
- 2 tbsp fresh cilantro + more to garnish
- A couple tbsp coconut yogurt
- 1 jalapeño
Mince onion and garlic.
Slice the carrots and cube the potatoes.
In a pot, add a tbsp of olive oil and fry the onion for a couple minutes.
Add garlic and fry for a minute.
Add carrots, potatoes and spices. Let it cook fo 2 minutes.
Add the lentils, stock, water and tomato paste. Mix well and cover with a lid.
Let it simmer for 30-40 minutes.
Before serving, add lemon juice and 2 tbsp of chopped cilantro.
Garnish the bowls with cilantro, sliced jalapeño and coconut yogurt.
