Loaded nachos with homemade cheddar sauce

The quintessence of appetizers : nachos! Even better when topped with a bazillion toppings. Go crazy with the toppings! I used ready made enchilada sauce to make it quick and easy but feel free to make it yourself.

The cheddar sauce is incredibly delicious. It thickens a lot when it cools so drizzle it while it's still warm!

Loaded nachos with homemade cheddar sauce (serves 4) :

  • 1 bag of plain tortilla chips
  • 200g ground beef
  • 1 onion
  • 1 jar of enchilada sauce
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1 avocado
  • 1/2 lemon
  • 1 roasted red bell pepper
  • Cilantro
  • A few jalapeño peppers
  • Salt and pepper

For the cheddar sauce :

  • 2 tbsp butter
  • 2 tbsp flour
  • 25cl milk
  • 400g (2 cups) shredded cheese
  • Pepper

Peel and mince the onion.

In a pan with a bit of oil, add the onion and ground beef. Let it cook on medium heat until the beef is no longer pink.

Add the cumin and ginger to the pan. Add the enchilada sauce. Cover and let it simmer while you make the rest.

Chop the bell pepper in small cubes.

Cube the avocado, drizzle with lemon juice to avoid browning.

Slice the jalapeño.

To make the sauce, melt the butter in a sauce pan and add the flour. Mix well.

Turn the heat off, pour the milk. Whisk until the milk is well incorporated into the flour roux.

Turn the heat back on and whisk. Add shredded cheese, a bit of pepper.

Whisk until the sauce thickens.

On a serving plate, add a layer of tortilla chips, add a bit of each toppings (bellpepper, jalapeno, cilantro...), meat and cheese sauce. Repeat until you run out of ingredients!
