Turkey and potato coconut curry

In need of a quick dinner idea? 30 minutes and you're good to go with this turkey and potatoes coconut curry. A bowl of fluffy rice and dinner is ready!

If the sauce is too thick, add more water as it simmers. Bon appêtit! ;)

Turkey coconut curry with potatoes (serves 4) :

  • 3-4 turkey steaks
  • 2 potatoes
  • 2 carrots
  • 1 onion
  • 400ml coconut milk
  • 2 garlic cloves
  • 1 tbsp curry powder
  • 1/2 tsp ground ginger
  • Vegetable oil
  • Salt and pepper

Peel and cut the carrots and potatoes.

Peel and mince garlic.

Chop the turkey in bite size pieces.

Mince the onion and fry it in a little bit of olive oil. Add turkey, garlic, carrots and potatoes. Mix well.

Add ginger and curry powders, mix. Stir fry for a minute or two.

Add coconut milk, salt and pepper. Cover and let it simmer for 15-20 minutes or until the carrots and potaotes are tender.

Serve on a bed of warm rice!
