Summer strawberry, mozzarella and arugula salad
We put tomatoes in our salads, right? Why not strawberries? That's how this salad was born, haha. I was surprised because I didn't think it would taste this good, but it's well balanced as long as you used super sweet strawberries.
The raspberry vinegar sauce gives it a good kick too! But apple cider vinegar will do if you don't have raspberry on hand. The walnuts give it a good crunchiness, it's refreshing and light. It would be delicious with some grilled chicken on the side!
Summer strawberry, mozzarella and arugula salad (serves 2) :
- 10 strawberries
- 20 mini mozzarella balls
- 2 big handfuls arugula
- 8 walnuts
For the sauce :
- 3 tbsp olive oil
- 1 tbsp raspberry vinegar (or apple cider)
- 1/2 tsp wholegrain mustard
- Salt and pepper
Wash the strawberries and quarter them.
Wash and dry the arugula.
Open the walnuts and keep them in fairly big pieces.
Prep the sauce by mixing oil, vinegar, mustard, salt and pepper.
Add a bed of arugula in a bowl, put the strawberries, mozza balls and walnuts.
Drizzle with the dressing and enjoy!
