Fall wheat salad with cranberries, cashews and kale

I know most of you don't want to be eating only soups in fall and this salad is perfect to switch things up. All sorts of good stuff in there but basically : wheat, kale, cranberries, cashews and a healthy amount of goat cheese to brighten it all.

I love salads with tons of things in them ! You get all the elements here : crunchy, creamy, sour, sweet... It's such a perfect salad for Fall !

Fall wheat salad with cranberries, cashews and kale (serves 5-6) :

  • 200g wheat
  • 3 kale stalks
  • 50g cranberries
  • 50g cashews
  • 1/4 red onion
  • 100g fresh goat cheese
  • 1/2 pomegranate
  • 1 tbsp olive oil

For the dressing :

  • 300g greek yogurt
  • 20 mint leaves
  • 1 to 2 garlic cloves
  • 1 lemon
  • Salt and pepper

Cook the wheat 10 minutes in a big pot of boiling water then drain it.

In a big bowl, add chopped kale leaves, no stems. Add olive oil and a bit of salt.

Massage the kale with your hands as if you were kneading dough, it will soften the leaves, making it easier to eat.

Add cranberries, cashews, pomegranate, minced onion and drained wheat.

Prep the dressing by slicing the mint leaves very thinly and grating the garlic. Mix it to the yogurt and lemon juice. Add salt and pepper.

To serve, add salad on your plate, crumble a bit of goat cheese on top and drizzle with dressing!
