Vanilla quince and apple sauce

The beauty is sometimes (and often) in simplicity ! So here is a simple but delicious quince and apple sauce, flavored with Bourbon vanilla from Reunion Island. It's a perfect dessert for these cold Fall days.

I like to use several varieties of apples here to balance it all. I use a few golden, a gala and a sweeter variety too. You could add sugar of course but I don't think it's necessary at all in this recipe. Taste it and adjust if needed.

Vanilla quince and apple sauce :

  • 500g quince
  • 1kg apple
  • 1 vanilla bean
  • 20-30cl water

Peel the quinces and apples, chop them in small cubes.

Put them in a pot with the water, grate the vanilla bean with a knife, add the vanilla's inside and bean to the pot.

Cover and let it cook on low for about 30 minutes or until the fruits are very soft.

Remove the vanilla bean and blend until smooth.

Serve at room temperature or cold !
