Ginger and cardamom biscuits

A delicious recipe for ginger and cardamom cookies, full of spices and flavors. Look at that gorgeous color and caramelization and the taste is incredible. Lots of butter, lots of sugar, you know me by now.

I used cardamom pods that I ground myself, it tastes so much better than the one you buy already ground, but both work in this recipe ! And use brown sugar for a beautiful caramelization, no white sugar.

Ginger and cardamom biscuits (12 biscuits) :

  • 120g (1 cup) flour
  • 110g room temp. butter
  • 150g (1/2 cup + 2 tbsp) brown sugar
  • 2 tbsp honey
  • 1/2 tsp baking soda
  • 1/2 tsp ground cardamom
  • 1 tbsp ground ginger
  • 1 egg yolk
  • 1 pinch of salt

In a bowl, mix together the flour, baking soda, salt, cardamom and ginger.

In the bowl of a stand mixer (or in a bowl and you whisk it by hand), cream together the butter and brown sugar. Mix until fluffy and creamy, it should take about 2 to 3 minutes.

Add the egg yolk and mix until fully incorporated. Do the same with honey, add and mix until incorporated.

Add the flour mixture and fold it in by hand with a spatula, don't overmix it. It just needs to be mixed in.

Shape little balls, just like you do with cookies, and freeze for 10 minutes at least.

Preheat the oven at 150°C/300°F.

Put the biscuits balls onto a baking dish covered with parchment paper and bake for 10 minutes. They must be golden brown.

Let it cool before digging it !
