Salt pork and lentil stew

What's more comforting than a big bowl of lentils... With salt pork it's even better ! Kinda like a "petit salé aux lentilles" which is a traditional french dish. It simmers all morning and then you eat it steaming hot with crispy bread and wholegrain mustard.

I simmer the meat first because it's cured in salt so it's super salty, taking some of that saltiness out makes the dish less salty but still delicious. I do not add any additional salt, it's not necessary in my opinion but you can if you want to.

You can also make "potée", "choucroute"... with salted pork. But this lentil dish only uses a few ingredients and it's quite easy to make so I made that.

Salt pork and lentil stew (serves 4-5) :

  • 500g salt pork
  • 250g green lentils
  • 4 garlic cloves
  • 1 onion
  • 4 carrots
  • 2 cloves
  • 2 bay leaves
  • 2 thyme sprigs
  • Pepper
  • Olive oil

Put the pork meat in a pot and cover it with water. Bring it to a boil and let it cook for 15 to 20 minutes. Discard the water.

Slice the meat in thick slices.

Mince the onion and garlic.

Heat a little bit of olive oil and add the onion and garlic. Fry them for a little bit, stirring continuously.

Add the meat and 1500 ml water. Add the thyme, bay leaves and cloves too. Season with pepper, don't be shy.

Let it simmer covered for an hour.

Peel the carrots. Add them after an hour, add the lentils to the pot too. Add 500ml of water if needed.

Cook on low for 30 minutes or until the carrots and lentils are tender.

Taste and add more salt/pepper if needed.

Serve warm and enjoy !
