Fresh cucumber and tuna salad (no mayo)

It's picnic season y'all and we won't settle for the boring pasta salad this year, I'm telling you ! So here's a delicious cucumber and tuna salad, so refreshing and no mayonnaise is involved.

Red onion for a little kick, some mustard in the dressing to spice things up and a good amount of parsley for some freshness, the perfect summer salad ! Serve with with crispy bread or some raw veggies.

If you have a can of tuna laying around waiting to be used (or several), this is the ideal recipe. Throw it in a jar or a container and take it with you wherever you go, share with your friends. Or don't.

Individual portion of quiches for starter or as a light dinner. You can make a big batch and keep it refrigerated in an air tight container so it won’t dry out. These ones are made with tuna, potatoes and thyme. A very yummy combo.

Fresh cucumber and tuna salad :

  • 360 g canned tuna
  • 130g greek yogurt
  • 1 tsp mustard
  • 1/2 red onion
  • 2 tbsp fresh parsley
  • 1/2 cucumber
  • 1/2 lemon juice
  • Salt and pepper

Open and drain the canned tuna.

Chop the red onion very small.

Cut the cucumber in half lengthwise. Take out the seeds and dice the cucumber.

In a bowl, mix together mustard, yogurt, lemon, salt and pepper.

Add the rest of the ingredients and mix well.

Store in the fridge until ready to serve.

Serve with crispy bread !
