Grilled peaches salad with prosciutto and mozzarella

To end this beautiful (but hot) month of August, I'm sharing this delicious grilled peaches salad with prosciutto and mozarrella. Lots of fresh basil with balsamic cream, it's even better.

It's a very simple salad to enjoy the end of the Summer, you can eat it warm or at room temp for the best experience. You can also throw in some tomatoes as well !

For the peaches, pick them rip but still firm or they won't hold well on the grill and it'll be a mess. You can grill them on a pan if you don't have a grill on hand.

Balsamic cream is, in fact, balsamic vinegar reduced until it reaches a thick syrupy texture. It's delicious on all sorts of salads and pizza.

Grilled peaches salad with prosciutto and mozzarella (serves 2) :

  • 4 peaches
  • 1 mozzarella ball
  • 4 prosciutto slices
  • Fresh basil
  • 3 tbsp olive oil
  • 1 tbsp balsamic cream
  • Salt and pepper

Quarter the peach, get rid of the pit.

Grill them 3 to 4 minutes on each side so they're nicely charred on each side but not overcooked.

In a service dish, display the peaches and add the proscuitto slices around them.

Tear the mozzarella ball with your fingers and add the pieces of mozzarella on the plate.

Add fresh basil leaves.

Prep the sauce by mixing together the oil, balsamic cream, salt and pepper.

Drizzle the sauce over the salad and serve.

You can eat this salad either warm or at room temp.
