Overnight oats, 3 ways : apricot, raspberry and apple

Here's to new beginnings in September ! A simple breakfast that you can make the night before and will keep you full until lunch time. Introducting you to : overnight oat. A cold porridge you let sit overnight in the fridge and can flavor it in the morning.

I'm sharing 3 ways to flavor your overnight oats today : raspberry, apricot and apple. We'll make the most of summer produce while they're still here and have a little bit of Fall with the all spice apple. You can use frozen raspberries for this if they're out of season.

You can make the flavorings the night before too, at the same time you're making the porridge and keep everything in the fridge until the morning. It's perfect for a fuss-free breakfast when mornings are crazy.

Why do I add greek yogurt to the porridge ? I like to add it in the morning just before eating it with the flavorings I picked because it really gives it a better, smoother texture. It's optional but I highly recommend it !

I use agave syrup to sweeten my oat but you can use sugar or honey.
Chia seeds are also used for texture, they're giving the porridge a firmer, less runny texture which I prefer.

I like to make a big quantity of this overnight oat (I triple or quadruple the recipe) so I can have it available for several days, it's even more practical this way. Porridge will keep in the fridge easily for 2-3 days in an air-tight container.

Overnight oats, 3 ways : apricot, raspberry and apple (serves 1) :

To make the overnight oat, mix in a bowl the oat, chia seeds, agave syrup and milk. Stir and let it sit for 5 minutes.

Stir to break any clumps and let it rest overnight in the fridge with a lid on.

Before serving the porridge, add the greek yogurt and stir.

You can use this porridge base to make a flavored porridge following the methid below :

Apricot overnight oat :

  • 2 apricots
  • 1/2 tsp agave syrup
  • A few rosemary leaves
  • 1 knob of butter

Melt the butter in a pan. Add the chopped apricots.

Add the agave syrup and rosemary. Let it simmer for a few minutes until the apricot is melted and softened.

Add porridge to the bottom of a jar, add some apricot sauce, add more porridge.

Raspberry overnight oat :

  • 8 raspberries

Mash the raspberries with a fork.

Add the mashed raspberries to the bottom of a jar and cover it with overnight porridge.

Add a fresh raspberry on top to decorate.  

All-spice apple overnight oat :

  • 1 apple
  • 1/2 tsp all spice
  • 1/4 tsp brown sugar
  • Butter

Melt the butter in a pan.

Add the chopped apple into the pan with the all spice and sugar. Let it simmer on low, stirring often until it's caramelized and tender.

Fill half a jar with overnight porridge, add some caramelized apples and top with more porridge. Add some apples on top if you feel like it.
