Vegan fall spiced granola
A fall-ish granola with lots of nuts and seeds sounds good, right ? Make a big batch on Sunday to enjoy throughout the week so you don’t wake up in the morning thinking about what to make for breakfasts each day ! You can eat it on its own, with milk or yogurt. It is crunchy and very delicious!
To keep it vegan, I used maple syrup but if that’s not your thing you can totally use honey instead! It is up to you. Use about the same amount.
Of course, feel free to pimp it. Add or leave out whatever you want! But please, don’t make my mistake, watch your oven. The first batch burnt and it was a disaster.
Vegan fall spiced granola (3 servings) :
- 2 tbsp sesame seeds
- 2 tbsp chia seeds
- 2 tbsp pumpkin seeds
- 10 coarsely chopped almonds
- 3 tbsp uncooked quinoa
- 4 tbsp oat
- 2 tsp all spice
- 1/2 tsp turmeric
- 1 tbsp coconut oil
- 2 to 3 tbsp maple syrup
Preheat your oven at 180°C/350°F.
Mix the coconut oil and maple syrup and melt on low heat until it’s well combined.
In a bowl, add all your other ingredients.
Add the maple syrup mixture to the seeds and mix well until everything is coated.
On a parchment paper covered baking sheet, spread the granola and bake for 10-15 minutes.
Let it cool and keep it in a air tight container.
