Cheesy baked gnocchi
Dinner ready in less than 30 minutes with this delicious cheesy baked gnocchi recipe, it's on my monthly rotation now ! Gnocchi baked in a delicious tomato sauce, covered with mozzarella and baked to golden perfection. Plus, it's vegetarian !
To make it even more simple (and time efficient), you can use good quality store bought tomato sauce and pour it directly in the baking dish with the boiled gnocchi, add mozzarella and bake.
It's a good family friendly meal, gnocchi are usually a good fit-for-all element. Serve this with some greens or a salad of your choice, it's a simple and quick dinner.
Cheesy baked gnocchi (serves 3-4) :
- 600 g gnocchi
- 420 g tomato sauce
- 1 tbsp dried thyme
- 1 tbsp dried oregano
- 1 tbsp dried rosemary
- 2 tbsp grated parmesan cheese
- 1 mozzarella ball
- Parsil of fresh basil
- Olive oil
- Salt and pepper
In a sauce pan, add the tomato sauce, thyme, oregano and rosemary. Season with salt and pepper. Simmer the sauce for 15 to 20 minutes. Add the parmesan and turn the heat off.
Preheat the oven at 180°C/350°F.
Cook the gnocchi in a large pot of boiling water for one minute, drain well.
In a baking dish, add a drizzle of olive oil. Add the gnocchi.
Pour the tomato sauce over the gnocchi and stir to coat.
Add the torn mozzarella on top.
Bake for 15 minutes, just until the cheese is crispy and browned.
Sprinkle with fresh basil or parsley right before serving.
Serve warm and enjoy !
