Turkey leg stew with white beans

A good ol' stew, comforting and cosy, with a melt-in-the-mouth turkey leg, white beans and carrots in a tomato sauce. What Winter dreams are made of ! There's a lot of stew recipes on the blog, I just enjoy them a lot, they're easy to make, will cook on their own while I do other stuffs and they're delicious.

The longest part of this recipe is pressure cooking the turkey leg. Once you're done with that, it only takes about 30 minutes. Nothing gets wasted, we reuse the broth we get from pressure cooking the turkey leg into the recipe, it's full of good nutrients and would be a shame to throw it away.

I serve this dish with either rice or steamed potatoes. You can also add more broth to make it more soupy. If you need soup inspo, check out my Cosy Soups book !

You can absolutely make this without a pressure cooker but you'll need to double the cooking time of the turkey leg, so 2 hours to get that tender meat.

You can add whichever veggies you like : leeks, turnips, cabbage... It doesn't really matter, it'll be delicious.

Turkey leg stew with white beans (serves 4) :

  • 1 turkey leg
  • 4 carrots
  • 1 large can of cooked white beans (800 g)
  • 2 onions
  • 200 ml tomato puree
  • 2 bay leaves
  • 1 clove
  • 3 garlic cloves
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • Salt and pepper
  • Olive oil

Put your turkey leg in the pressure cooker. Cover with water. Season with salt and pepper, add the clove and bay leaves.

Let it cook for an hour after it starts hissing.

Let the steam out, take the meat out of the pressure cooker and shred it using two forks. Take all the bones out. Keep the broth for later.

Mince the onion, peel the carrots and cut them in half circles.

Mince the garlic. Rinse the cooked white beans under cold water.

Heat a little bit of olive oil in the cooker, add onions and garlic. Let them cook for a minute or two.

Add the carrots, paprika and thyme. Season with salt and pepper. Stir well.

Add the tomato puree and 650 ml of the broth we've set aside.

Cover and let it simmer for 20 minutes.

Add the shredded meat, white beans and adjust seasoning if needed. Let it cook for 10 minutes until everything is warmed up, serve !
