Fall mushroom lasagna

I used 4 different types of mushrooms to make this lasagna (trumpets of death, chanterelles, hedgehog and porcini). The porcini cream is a replacement for the more traditional bechamel sauce.

Creamy red lentil dal

Daal is a well know Indian dish, bengali to be exact. It comes in 1001 variations, this one is a red lentil dal. I didn't have any garam massala on hand so I made my own and put the recipe down below.

Cucumber raita, Indian cooling yogurt sauce

Raita is an indian yogurt sauce, often served as a side with spicy dish to cool the palate. It's basically yogurt with a lot of herbs and spices, it's so refreshing. I made it with cucumber today but if it's out of seaso, you can also make a carrot raita.

Fall wheat salad with cranberries, cashews and kale

I know most of you don't want to be eating only soups in fall and this salad is perfect to switch things up. All sorts of good stuff in there but basically : wheat, kale, cranberries, cashews and a healthy amount of goat cheese to brighten it all.

Vanilla duck stew, canard à la vanille

A very flavorful dish coming straight from Reunion Island : canard à la vanille. It's a stew with a vanilla bean to flavor it all, duck meat falling apart because it's so tender... Don't knock it 'til you try it !
