Beef, feta, almond and spinach stuffed red kuri squash

One can never have too many squash recipes in my opinion. So here's a nice way to serve red kuri squash, stuffed with ground beef, spinach, feta and almonds. Everything tied together with thick sour cream.

It's a perfect recipe for entertaining, you can cook the squash ahead of time and reheat them after stuffing them. Makes for a quick dinner !

Beef, feta, almond and spinach stuffed red kuri squash (serves 2) :

  • 1 red kuri squash
  • 250g ground beef
  • 1 onion
  • 2 garlic cloves
  • 2 tbsp sour cream
  • 10 almonds
  • 100g fresh spinach
  • 50g feta
  • Salt and pepper
  • Olive oil

Preheat the oven at 180°C/350°F.

Cut the red kuri squash in half and take out the seeds.  

Brush it lightly with olive oil and put it in an oven safe dish. Bake for 30 minutes.

Meanwhile, prep the stuffing.

In a pan, heat a bit of olive oil.

Chop the onion and mince the garlic.

Add the onion, garlic and beef in the pan and fry until the beef is cooked through. Season with salt and pepper.

Add the chopped spinach. Let it cook 5 minutes.

Add sour cream, let it cook an additional minute. Turn the heat off.

Chopped the almonds and crumble the feta. Add it to the pan. Mix well.

Once the red kuri squash is cooked, stuff it with the beef mixture and bake for 10 minutes at 180°C.

Serve warm.
