Soy and ginger flavored tofu + easy hearty lunch bowl (vegan)
It is the first time I’m cooking tofu you guys. I finally did it. I already had some (at the chinese restaurant mainly) but I never did it myself. This week I had no choice : my husband decided to do a reboot fast and I decided to go vegan for a whole week to +++ my intake of fruits and vegetables and stop consuming meat/dairy for a moment.
I thought I’d do something simple, I was quite scared the texture would disgust me but it did not! I tried an asian flavors combo I really love, marinated the tofu, pan fried it and that was very yummy! Kinda has the texture of an omelet.
For the hearty easy bowl, I threw what I had in the fridge : leftover rice, salad, canned corn, cucumbers, mushrooms and some sesame seeds. Healthy lunch done !
Soy and ginger flavored tofu (serves 2) :
- 6 slices of firm tofu
- 3 tbsp soy sauce
- 1 tbsp oil
- 1 tsp grated ginger
- 1 tsp grated garlic
Add every ingredients except the tofu in a bowl. Stir well.
Add the sliced tofu and coat well.
Marinate for a couple minutes. Meanwhile prep the other ingredients of your bowl. Heat a pan with a splash of oil.
Add the tofu on medium/high heat and cook 5-6 minutes on each side. After 5 minutes, before flipping it, add the remaining marinade sauce.
Serve warm.
