Veggie noodles stir fry
Typically my kind of meal! Easy, quick and uber delicious! I just throw everything that is in the fridge and need to be used up. Get creative with the vegetables, it is good with almost every single one of them. You could also add some fruits like pineapple.
For the oyster sauce, you can find it in asian supermarket. We can find it in France in our local grocery store so check in yours, you might be surprised! It is delicious to put in stir fry or dish that are saucy, you’ll love it if you never tried it.
I decided to go veggie with mine but you could use finely sliced beef or chicken. You could even add shrimps, that’ll be perfect too 🙂
Veggie noodles stir fry (serves 4 to 6) :
- 250g noodles
- 2 carrots
- 1 handful green beans
- 1 head of brocoli
- 1 red pepper
- 1 onion
- 2 garlic cloves
- 2cm ginger
- 4 tbsp oyster sauce
- 8 tbsp soy sauce
- 1/2 lime
Cook the noodles according to the instructions on the packet. Run it under cold water to stop the cooking process once drained. Set aside.
Peel if necessary and chop all the veggies : carrots, red pepper, brocoli, green beans and onion.
Mince very finely (or grate) ginger and garlic cloves.
In a deep pan (or wok), add a tablespoon of oil and fry the garlic and ginger on medium heat.
Then, add the carrots, red pepper and onion. Stir and cook for about 5 minutes.
Add the green beans and brocoli fleurets. Stir and cook for 2 to 4 minutes.
Add the lime juice, oyster sauce and soy sauce to the pan. Mix until well incorporated. Add in the noodles.
If the sauce is a little too thick, add a splash of water.
Mix until the noodles are well coated and vegetables are mixed in the noodles.
Serve warm with chili on the side!
