Marinated mushrooms
Look how perfect these tiny marinated mushrooms are. Look how cute! In a delicious marinade made with garlic and red onion, a few aromatics, you get these juicy flavorful mushrooms. It literally cooks for 4 minutes before going in a bath of marinade.
My zero-waste tip? Keep the marinade once you've eaten all the glorious mushrooms and repurpose it into a dressing for your favorite salad! It is slightly sour and delicious.
Marinated mushrooms :
- 200g small mushrooms
- 30ml red wine vinegar
- 40ml olive oil
- 15g red onion
- 1 garlic clove
- 1 tsp brown sugar
- 1/2 tsp ground black pepper
- 1 bay leave
- 2 tbsp minced fresh parley
- 2 tbsp thyme leaves
- Salt
- 2 tbsp coarse salt
Put a liter of water with coarse salt to boil.
When it is boiling, add the well cleaned mushrooms and cook for 4 minutes. Drain well.
In a bowl, mix oil an vinegar. Add pressed garlic and minced red onion.
Add sugar, thym, bay leave, pepper and salt in the bowl.
Add the mushroom to a jar, pour the marinade over it. Close the jar, shake it a couple times and let it sit in the fridge for 6 hours minimum.
You can then store it in the fridge for 4 days.
When ready to serve, garnish with minced parsley.
