Fudgy gluten free chocolate cake

While scrolling the internet for a good gluten free chocolate cake, I found this one and it was such a hit that I cannot not share it with you! It's fudgy but not too sweet, it is easily removable from the pan (which is a problem I frequently encountered with gluten free cakes in the past, sticking to the pan and making a big mess) if you use parchment paper.

Would you look at that texture? Doesn't it make you want to take a big bite? I do! And I did... Anyways, I really recommend this recipe if you're looking for an easy, no fuss, gluten free recipe without weird ingredients.

Fudgy gluten free chocolate cake (serves 6-8 ) :

  • 200g dark chocolate
  • 250g mascarpone
  • 4 eggs
  • 80g white sugar
  • 40g corn starch
  • 40g almond powder
  • 1 pinch of salt

Preheat the oven at 160°C/320°F.

Melt the chocolate on the stove or in the microwave.

Meanwhile, whip the mascarpone in a bowl until creamy, for a minute or two.

Add the melted chocolate to the mascarpone and keep whipping.

Add eggs one by one, whipping in between each.

Then add sugar, salt, corn starch and almond powder. Mix until smooth.

Cover an oven safe square pan with parchment paper and pour the batter in.

Bake for 30 minutes at 160°C/320°F.

Let the cake cool a bit before lifting it out of the pan.
