Spinach and goat cheese mini quiches
My passion for quiches knows absolutely no limit, it has been going on for years. Simple to make, delicious to eat, I mean, I'm a simple girl. There are several versions of quiches on my blog but today we are hitting the simplicity button with these spinach and goat cheese quiches.
I've been working with Fromages.com recently to create recipes and food photography for their website and have had the immense pleasure of eating through their cheeses. I used their Coeur de Chèvre for this recipe, it's strong and powerful, perfect pairing for spinach!
Spinach and goat cheese mini quiches (6 pieces) :
- 1 sheet of pastry dough
- 50g goat cheese
- 200g spinach
- 4 eggs
- 2 tbsp sour cream
- 1 tbsp milk
- 1 handful grated cheese
- 1 tsp garlic powder
- Salt and pepper
Preheat the oven at 180°C/350°F.
Cut 6 circles of dough in the sheet of pastry dough. Put the 6 dough circles in 6 mini tart tins.
In a bowl, whisk eggs, garlic, grated cheese, milk and sour cream together. Season with salt and pepper.
Cook the spinach in a pan until wilted and most of the liquid has evaporated.
Poke several holes at the bottom of the pastry circles with a fork.
Add a good tablespoon of spinach in each tin.
Crumble some goat cheese on top of each tin.
Cover with your egg mixture.
Bake at 350°F/180°C for 20 minutes.
Enjoy warm or at room temperature!
