Spicy pork and basil egg noodles
Inspired by this amazing thai cookbook that I love, I kinda remade it with what I had on hand and it was delightful! Spicy, flavorful and delicious : it will make your tastebuds jump.
If you don't like spicy food, you can leave it out but it really makes the taste and experience of the dish better! You could sub the basil with thai basil if you have it.
Spicy pork and basil egg noodles (serves 3-4) :
- 300g pork
- 350g eggs noodles
- 200g soy bean sprouts
- 4cm ginger
- 4 tbsp soy sauce
- 10 basil leaves
- 1/2 bunch of chives
- 150ml chicken stock
- 1 red chili
- 1 tbsp vegetable oil
Chop the pork in bite size pieces.
Slice the chili.
In a frying pan, add the pork with vegetable oil and chili and fry for a few minutes until golden brown.
Mince the ginger.
Add egg noodles, ginger and stock to the pan. Stir well.
Cover and let it steam for a minute.
Add soy sauce, pepper, soy bean sprouts and chopped herbs.
Mix well to coat everything and serve!
