Homemade beef doner kebab

I was craving a doner soooo bad but didn't to use delivery for that because... Well it's a selfish pleasure and I don't want a delivery guy to be at risk just for that. So I decided to figure out a way to make some at home with what we had.

I did homemade pitas but am not 100% satisfied with the recipe so I won't share for now, there are plenty on the internet, you'll find a good one I'm sure! You could also use storebought ones.

Then, for the beef, I had 2 skirt steaks in the freezer. I marinated these with a lot of good spices then fried it. You could use veal or turkey too, it will be more like a real doner but I did with what I had on hands! No time to be picky.

Salad, tomato, onion, the famous trio of a delicious doner. I also whipped up a quick yogurt mint and garlic sauce. I'd say we did pretty well, it was delicious and it did the job!

Homemade beef doner kebab (6 pieces) :

  • 6 pita breads
  • 400g skirt steaks
  • 1 onion
  • 2 tomatoes
  • 200g baby greens (here spinach, swiss chard and arugula)
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 1/2 tsp ground turmeric
  • 1/2 tsp chopped parsley
  • 1/2 tsp paprika
  • 2 tbsp olive oil

For the sauce :

  • 150g plain greek yogurt
  • 1 garlic clove
  • 6 mint leaves
  • 1 tbsp chopped coriander/cilantro
  • 1/2 lemon
  • Salt and pepper

A few hours (or the day before), prep the marinade for the steaks. Add olive oil, paprika, parsley, cumin, turmeric and ginger into a shallow dish. Add salt and pepper, mix well.

Add the steaks to the marinade and rub it well so it is evenly coated. Let it marinate at least an hour and up to 12h.

Slice onion finely and chop the tomatoes.

Wash and drain the greens.

For the sauce, chop herbs and garlic finely. Add it all to the greek yogurt, add lemon juice, salt and pepper. Mix well and let it sit in the fridge until you are ready to use it.

In a hot pan with no added fat, put the steaks. Cook it for 5 minutes on each side. If it's too rare in the middle, it will be harder to eat in the doner but do as you prefer.  

Let the meat sit a few minutes before slicing it finely.

Fill the pitas with meat, sauce, greens, tomato and onion as you wish.
