Colorful asian inspired cabbage salad with peanut butter dressing

A summery salad to add to the salad collection of the blog, I was craving coleslaw but then decided to add a few asian-ish elements that I like! So we ended up with cabbage, carrots, bean sprouts and a creamy peanut butter dressing, that is sooo good.

It is a nice twist from the mayonnaise or vinaigrette based salad and it's good! It's full of protein so it can be a whole meal in itself with a bit of bread. Have a nice day!

Colorful asian inspired cabbage salad with peanut butter dressing (serve 6) :

  • 1/4 red cabbage
  • 1/4 white cabbage
  • 2 carrots
  • 200g beans sprouts
  • 200g edamame beans
  • 1 lemon
  • 1/2 bunch of cilantro
  • 2 tbsp sesame seeds

For the sauce :

  • 150g peanut butter
  • 1 tsp grated garlic
  • 100ml water
  • 1 tbsp sugar
  • 4 tbsp soy sauce

Prep the sauce by mixing all the ingredients together and whisk well.

Slice the two cabbages thinly.

Shred the carrots.

Mix the veggies along with bean sprouts and edamame into a big bowl.

Squeeze the lemon in the bowl and mix well.

Add 3/4 of the peanut butter dressing to the salad and mix well.

Add sesame seeds and chopped coriander. Mix.

Serve cold!
