Peach & prosciutto caprese

Far from your very traditional caprese salad but don't judge me! Or do but try it anyway. I added a few non-traditional bits to make it extra special and delicious, it's refreshing, perfect for Summer!

What's going on here : sweet cherry tomatoes, serrano ham, fresh basil, an extra creamy burrata with truffles and juicy sun-gorged peaches. Add to that a delicious fresh basil dressing and you're good to go.

It's so good and refreshing. Truffled burrata? Yes please! It's obviously option and you could use a regular burrata but it really adds depth and flavors to that salad. Try it!

Peach & prosciutto caprese (serves 2) :

  • 20 cherry tomatoes
  • 4 slices serrano ham
  • 15-20 fresh basil leaves
  • 2-3 peaches
  • 1 burrata (truffled or not)
  • 6 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 small garlic clove
  • Salt and pepper

Wash tomatoes and peaches.

Chop cherry tomatoes in half and peaches in slices.

In a big plate, add tomatoes, peaches, serrano ham and spread the burrata on top.

Add 5 fresh basil leaves to the plate.

In a blender or food processor, add olive oil, 10 basil leaves, vinegar, garlic, salt and pepper. Blend until smooth.

Drizzle the dressing over the salad and enjoy!
