Bacon and parmesan smashed potatoes

We're back with the oven recipes because temps dropped drastically and I love it. New potatoes baked until crispy and loaded with good stuff. Easy to make, delicious to eat, add some greens and dinner is set!
Here I added parmesan and bacon bits but add whatever you like. I am doing a morbier version soon for a client and I can't wait. What are some your favorite Fall dishes?
Bacon and parmesan smashed potatoes (serves 3-4) :
- 1kg new potatoes
- 60g bacon bits
- 4 tbsp grated parmesan
- 4 tbsp olive oil
- 2 tsp garlic powder
- Salt and pepper
- Chopped parsley
Brush the potaotes. Put it in a pot, cover with water and boil until a knife tender.
Drain and let it cool a little bit.
Preheat the oven at 180°C/350°F.
On a parchment paper covered baking sheet, add 1 tbsp olive oil and brush it all over.
Add the cooked potatoes on the oiled sheet and smash them with a potato masher or the back of a wooden spoon.
Sprinkle with garlic powder, salt and pepper. Add bacon bits and grated parmesan on the potatoes.
Drizzle with the remaining 3 tbsp olive oil and bake for 30 minutes.
Garnish with parsley and serve!
