Pasta al limone, lemon pasta from Italy

I was looking for an easy pasta recipe but got kinda bored of the bolognese one I always make. I stumbled upon several pasta al limone pics on Pinterest and was commited to try it. I love everything kinda sour/lemony so I knew I'd love it. And I did ! Spaghetti coated in a creamy lemony sauce, to be eaten with a mountain of grated parmesan on top obviously.

You can use whatever pasta shape you like but spaghetti have a special place in my heart, they're my fave ! Lemon zest is so important in this recipe, it gives the sauce such a depth of flavor. To be eaten as is or with grilled meat.

Pasta al limone (serves 4) :

  • 250g uncooked spaghetti
  • 1 lemon
  • 20cl heavy cream
  • 50g grated parmesan
  • 1 garlic clove
  • 1 knob of butter
  • Salt and pepper

Grate the garlic.

Squeeze the juice of the lemon and zest it.

Cook the pasta according to the package directions for an al dente pasta and reserve 1 1/2 cup (300ml) of cooking water once they're done.

While the pasta is cooking, melt the butter in a pan big enough to put the spaghetti in later.

Fry the garlic for a minute or two, be careful it burns fast.

Turn the heat down on low and add the lemon juice, zests, cream and half of the pasta cooking water.

Add the parmesan and mix well.

Once the pasta is drained, add it directly to the sauce and toss to combine.

Season with salt and pepper.

Serve right away with parmesan on top !
